Grilled Chicken Shwarma
In the summertime, a warming, spicy dish can be just the thing to cool you down. This shawarma recipe is made for the grill and is paired with a refreshing sauce. Add in rice heavy with herbs and some grilled or fried zucchini and you’re cool in the shade. Enjoy!
Chicken:
1 tsp paprika
1 tsp ground cumin
1 tsp ground coriander
½ tsp ground turmeric
1 tsp onion powder
1 tsp garlic powder
Salt and pepper
1 ½ cups plain yogurt
3 tbsp extra-virgin olive oil
2 pounds boneless, skinless chicken breasts or thighs
Procedure:
Place all ingredients in a large zip-top bag and massage to coat the chicken.
Place in refrigerator for 2 hrs and up to overnight.
Prepare grill and cook chicken about 8 minutes per side.
Chicken is done at 165 degrees.
Rest for 5 minutes and slice to serve over rice.
Tahini-Yogurt Sauce
1/2 cup plain yogurt
1/2 tbsp tahini
!/2 freshly squeezed lemon juice
1/2 tsp garlic powder
1 tbsp olive oil
Salt
Cold water (if necessary to thin sauce)
Procedure:
Combine all ingredients and stir to combine.
