Each week, Chef Chris Chisholm shares a dinner recipe alongside the perfect wine to match. These wines are generally available to taste during our weekend wine tastings!!
Chris brings a rare combination to the table — he's a Certified Specialist of Wine, a graduate of Boston University's Wine Studies and Winemaking programs, and a trained chef from Cook Street School of Culinary Arts in Denver. He has worked as a personal chef and chef instructor, which means his pairings are as practical as they are delicious.

For this recipe, a light, refreshing profile would be perfect. This week we are featuring a unique white wine from Jo Pithon, a Loire Valley winemaker. The Voyage dans les Vignes ‘Pesked’ is a blend of the white grape (80%) Melon de Bourgogne and a red grape (20%) Grolleau, though there is no skin contact, so the wine remains white. The wine shows lots of minerality and some notable texture due to lees contact. You will find many reasons to enjoy this wine with a variety of dishes.

This week we are featuring Cantine Mucci Valentino Pecorino. This wine from Abruzzo Italy is full of tropical notes, especially peach. The wine is fresh and bright with a dry mineraly finish and will refresh the warming spices of this recipe.

Our featured white wine this week would be a great pairing with this recipe. The Gaspard Sauvignon Blanc from the Loire region of Touraine (vs the more familiar Sancerre). This wine is exactly what you’re looking for in a summer beverage- citrus, apple and minerality in a crisp, dry package. Enjoy this all summer long with seafood, cheeses and other light dishes.

Red wine is always a good choice with pasta sauces. This week we are featuring a Nebbiolo from the Piedmont region. Cantina San Matteo Nebbiolo is a young and fresh expression of the grape. It shows some of the typical notes of flowers and cherry. On the palate, dark fruits and savory flavors shine and finish with the fruit driven tannins. The wine is aged in stainless steel, making for light and easy-drinking Nebbiolo.
