Mediterranean Baked Fish

On the table in thirty minutes, this dish packs lots of flavor in a healthy punch. Serve with steamed vegetables and rice for a complete meal. Enjoy!

Serves 4
Ingredients:
2 lbs white fish (cod, haddock, halibut)
1/2 cup Kalamata olives, pitted
2 cups cherry tomatoes
2 garlic cloves, sliced thin
Dried oregano
Paprika
Salt 
Pepper
Olive oil
Lemon zest
Lemon juice
Rosemary sprigs
Thyme sprigs
Parsley, chopped

Preparation:
Preheat the oven to 400 degrees
In a baking dish, add the fish, olives tomatoes and garlic
Season with the oregano, paprika, zest, salt and pepper
Layer the rosemary and thyme over the fish
Pour about 1/2 cup olive oil over the entire dish
Add zest and a squeeze of lemon 
Cook in the oven for about 15 minutes 
Remove and serve with chopped parsley and more lemon juice
